Cheap and Easy Garlic Parsley Chicken, Under $1 a Serving - Frugal Family Home

It’s hard to get dinner done each night. With all the prep work and the kids complaining and fighting, it can be maddening. But what if you could have a delicious garlic parsley chicken recipe waiting in the freezer? Wouldn’t that be helpful?

All you would have to do is thaw the chicken and cook it. All the other prep work is done. Making dinner so easy to get done.

Easy Freezer Meal, Garlic Parsley Chicken

Before you say, I’ve tried freezer cooking, it doesn’t work. I spent all day cooking and was so tired at the end of the process, we ate out.

I hear you. That’s how I used to freezer cook too. I’d go to the store buy all the ingredients needed, even the ones that weren’t on sale. Spend more money than I normally would on food. Then I’d spend all day chopping and prepping ingredients.

Then next day I would spend all day cooking, cooling, and loading the freezer with food. After two days I was beat. And we would end up eating dinner out.

The rest of the month was nice, having meals ready to go, but I knew there had to be a better way.

That’s when I discovered meal packs. I’ve found freezer cooking this way saves me money and time. And I’m not exhausted when I’m done either.

Instead of shopping, prepping, and cooking all day for two days. I only freezer cook when I find meat on sale.

Then I buy what I can afford, make the freezer meals (no cooking involved) and load them into the freezer. I usually can stock 10-40 pounds of meat in about an hour.

This garlic parsley chicken freezer recipe is one that is so simple to make. You measure the ingredients, add the chicken to the freezer bag. Pour the marinade on and freeze.

Ingredients
  • 3 tablespoons Oil
  • 2 tablespoons Honey
  • ¼ cup Fresh Parsley, chopped
  • 3 Garlic Cloves, minced
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper
  • 1 pound Chicken Pieces
Instructions
  1. Place the oil, honey, parsley, garlic, salt and pepper into a bowl and stir.
  2. Place chicken into a zipper topped freezer bag and add the marinade.
  3. Remove as much air as you can, label and freeze, if making for the freezer.
  4. If preparing for that day let the chicken in the bag marinate in the refrigerator for an hour or overnight if desired.
  5. When ready to cook, heat a clean grill to 375 degrees.
  6. Once warm, place the chicken on the grill. Discard leftover marinade.
  7. Cook on one side for 15 minutes or until chicken looks opaque white.
  8. Flip the chicken over the cook on the other side until cooked through.
  9. Remove from grill cover and let sit for about 10 minutes.

Garlic Parsley Chicken Cooking Tips

While we prefer to grill this garlic parsley chicken recipe. You can cook this garlic parsley chicken quite a few different ways.

Which makes it perfect to prepare no matter what kind of day it will be. I’ll go through each one so you can pick which one works best for you.

Grill, this is our favorite method of cooking. Heat the grill to 375 degrees. Clean the grill place the chicken on the hot grill and discard marinade. Cook on one side for 15 minutes flip and cook until done on the second side.

Bake, If making sheet pan dinners is more your style, or it’s winter and you don’t want to grill. You can bake this chicken on a sheet pan with vegetables for a full dinner right out of the oven.

Chop your vegetables. Leave the faster cooking vegetables larger so they don’t get mushy. Add a little oil and seasoning to the vegetables and spread out on a baking sheet. Leaving a little room for the chicken.

Add your thawed chicken to the baking sheet. Discard the leftover marinade. And bake at 400 degrees for about 30-45 minutes or until the chicken is cooked through and the vegetables are done.

This makes a full dinner in just minutes of hands on time and leaves you time to do something else while dinner is cooking. Yay!

Slow Cooker, If you know you’ll have a busy day, add the thawed chicken package to the slow cooker. Set it on low and let it cook while you go about your day.

In about 6 hours your chicken should be cooked through, depending on how big the chicken pieces are and ready to eat.

Add a side dish of mashed potatoes and steamed broccoli and dinner is done.

Broil, If you want your chicken grilled but the weather is too cold to grill, try broiling it. It’s turns out good this way.

Place the thawed chicken on a sheet pan or broiling pan. Discard marinade. Place in the oven about 3-6 inches away from the top element. Broil on one side about 10 minutes and flip over the broil until done.

If the meat is a thicker, place it farther away from the heat source and let cook longer. If the meat is thinner, you can place it closer to the heat source and cook for a shorter amount of time on each side.

Be sure to check the chicken is cook through.

Pan Fried, if you’ll be pan frying the chicken it’s best to do this method with thinner cuts of chicken.

If you butterfly cut the chicken breast first, that is the best bet for this cooking method. If the meat is too thick, it’s harder to get it cooked through without overcooking the outside.

Heat the pan on medium to medium high and add a little oil to the pan. About 1 tablespoon. Once the oil is warm, add the chicken and cook on one side until it’s golden brown. Flip the chicken and cook on the other side.

Check for doneness. If the chicken is cooked through, you’re ready to eat. If the chicken isn’t cook through, turn down the heat and cover the pan and let it cook until done. I will flip the chicken from side to side during this time so it doesn’t burn or get overly browned.

If I butterfly cut the chicken before pan frying it will cook quickly. This method doesn’t work as well with thicker cuts of chicken.

How Much Does it Cost to Make this Garlic Parsley Chicken Recipe?

I like to know how much a recipe will cost me to make. It helps me pair less expensive meals with more expensive meals during the week to keep food costs in check. Here’s the breakdown of this recipe for you….

Chicken, 1 pound boneless skinless chicken breasts $1.99 (this is the price I look for on sale or less when I purchase chicken)
Parsley, 1 bunch $.59 (you’ll only be using part of it) $.14
Garlic, 1 head $.50 (you’ll only be using part of it) $.06
Oil, $1.99 for 48 ounces of Canola Oil or $.02 for a tablespoon
Honey, $3.19 for 12 ounces or $0.12 for 3 tablespoons
Salt and Pepper, $.05

That brings the cost of this recipe for 4 servings to $2.38 or just $.60 a serving. That’s not bad at all.

Add a half bag of frozen vegetables for $.50 and make a cup of rice for a side dish at $.38 and you have a full meal for just $3.26 for a family of four or just $.82 per meal.

Now that’s a frugal dinner for sure.

Slow Cooker Beef and Bean Enchiladas for Busy Days

Slow cookers are great to have. You can set it up and forget about it until it’s time for dinner. Almost like having a cook on hand to prepare meals. But you have to add the food to the slow cooker.

In the summer, I use my slow cooker often when the weather heats up. But I also use my slow cooker on busy days when I know I’ll be tempted to want to eat out and not cook dinner.

But if I have already started the meal in the slow cooker, we eat at home and save money. And you can save a bundle by eating at home.

My slow cooker is one like my mom had oh so many years ago. I purchased it after I had discovered I was buying a new crock pot about once a year. Yes I use mine that often.

I purchased this slow cooker. It’s a great little slow cooker just like the one my mom had. And her’s lasted and lasted.

I’ve had my slow cooker about 5-6 years now and it still is working great. I think the next time I need to purchase one I’ll be getting a 6 quart model though.

For just a little more room to cook in. But the 5 quart slow cookers works good for our family of 4.

Why Make Enchiladas in the Slow Cooker…

Making enchiladas in the slow cooker is something I tried. We love them but heating the house with the oven on a warm day isn’t a great idea.

I went with layered slow cooker enchiladas instead of making rolled enchiladas. It made the dish a little thicker, more like lasagna. So it can stand up to the longer cooking time.

Be sure to check your slow cooker enchiladas after about 3-4 hours of cooking. Some slow cookers can cook a little faster. Mine on low is very slow to cook but others might not be the same.

Everything is already cooked so you only need to heat it through. The first time you make this recipe, be sure to check on it early. To make sure the tortillas don’t burn on the bottom from cooking too long.

What You’ll Need to Make These Slow Cooker Beef and Bean Enchiladas

  • Ground Beef, we use half a pound but if your family likes more meat, use a full pound.
  • Beans, Pinto or Black Beans
  • Enchilada Sauce
  • Cheese
  • Tortillas

I made my enchilada sauce using my friend Sandra’s recipe.  But you could use canned sauce or the foil packets with tomato sauce. Use whatever your family likes the best.

I started with some pre-cooked ground beef from my freezer. I only used a half pound, since I was adding beans, but if your family are big meat lovers, add a full pound.

I also had black beans in the freezer, so I used them instead of canned beans. But the canned beans would work well.

You don’t have to use black beans, use pinto beans if you prefer them instead. If using canned beans be sure to drain off the liquid.

How to Assemble the Crockpot Enchiladas

To assemble the slow cooker enchiladas. I start with a layer of sauce on the bottom.

In the past, I’ve started with a layer of tortillas on the bottom. But after making this recipe quite a few times it’s better to place a layer of sauce on the bottom than the tortillas.

The enchilada sauce helps to keep them from overcooking and getting too crisp.

We make the slow cooker enchiladas with flour tortillas. You can use corn if you prefer those better, but I find they tend to fall apart.

Add a layer of tortillas on top of the sauce. I cut the tortillas in half so they will fit better.

Add more sauce, then 1/3 of the beans and 1/3 of the meat. Then another layer of tortillas. And repeat the process ending with sauce and cheese on top.

Ingredients
  • ½ pound Ground Beef or Turkey, cooked and drained
  • 2 cups canned Beans (pinto or black, drained if canned)
  • 2 cups Enchilada Sauce
  • 1 cup Cheese, shredded
  • 6 Flour Tortillas, cut in half
Instructions
  1. Place ½ cup sauce in the bottom of the slow cooker and spread it out.
  2. Place 3 tortillas on top of the sauce. Add ⅓ the beans and ⅓ the cooked meat on top of the tortillas.
  3. Add three more tortillas, spread sauce on top of the tortillas. Add ⅓ the beans and meat again.
  4. Layer another three tortillas on top and spread ½ cup of sauce over them. Add the rest of the beans and meat.
  5. Top with the remaining 3 tortillas and spread the sauce on top. Sprinkle with cheese.
  6. Place the lid on the slow cooker and cook for about 4-6 hours on low or until the enchiladas are heated through. Check at about 3 hours in case your slow cooker, cooks faster than mine.

  What does it cost to make Slow Cooker Beef and Bean Enchiladas

I like to break down the cost of recipes we eat often. There are two reasons for that.

One you know how much it costs to make.

And two you can pair more expensive splurge meals in a week with less expensive frugal meals to keep your grocery spending under control.

When you know how much each recipe costs to make you are in control of your spending.

The prices listed below are prices I regularly pay at our local grocery stores. Your prices might be a little higher or lower depending on where you live. But this can give you an idea of how much this dinner will cost to make.

Here’s the cost breakdown for these crockpot enchiladas

Ground Beef $1.50 for half a pound, or $3 for a full pound
Beans, Canned $.60, or Beans made from Dry, $.20
Enchilada Sauce, $1.50 canned, or $1 for Tomato Paste and Dry Packet
Tortillas $.75 for 6 (purchased $2.99 for 24 tortillas)
Cheese $1 for pre-shredded or $.75 if you shred it yourself.

The least expensive way to make this recipe the total cost is $4.23 or $.71 per serving.

If you use the most expensive options that will bring the cost to $6.85 or $1.14 per serving. Not bad and you’ll be able to get this recipe together faster with pre-made sauce, and pre-shredded cheese plus double the meat.

Growing up we used to enjoy tv dinners every now and then. It was an inexpensive dinner for our family. It gave my mom the night off from cooking and we got to watch tv while we ate. As a kid, we looked forward to tv dinner nights.

In our home every now and then I purchase tv dinners. But it’s harder to find ones my kids and hubby can eat with their milk allergy.

My hubby always asks is there a dairy free Salisbury steak tv dinner. I always had to answer no because I couldn’t find one.

I thought how hard could it be to make my own Salisbury steak? I looked over a few recipes to get an idea of how others make Salisbury steak.

But like the tv dinners, they all had milk in them too. Either in the brown gravy or added to the beef. So I devised to make my own recipe that my family could eat.

You don’t have to eat dairy free to enjoy this recipe for Salisbury steak. It’s really good even though it’s dairy free.

How to Make Easy Salisbury Steak at Home

Tips for Making Quick Salisbury Steak at Home

Keep the cost down by making your own breadcrumbs. Breadcrumbs in the cans at the store can be expensive for what you’re getting.

I used soft breadcrumbs in this recipe. You can make your own breadcrumbs by taking a couple slices of bread and processing them in the food processor or blender.

I like to cube the bread first then add it to the food processor and process until they are the consistency of bread crumbs.

I like to use 80% lean or 85% lean ground beef in this recipe. It’s leaner than 75% lean, so less fatty. But not so lean like the 93% lean ground beef that can be a little dry once cooked.

If you need to eat dairy free be sure to check the brown gravy mix. I had to search to find one that was dairy free.

I found that the Winco Foods brand brown gravy mix was dairy free if I purchased the reduced sodium one. The regular brown gravy mix had dairy. Be sure to check the different varieties you store carries you might find one you like better.

Be sure to grease or spray the skillet. I made the mistake of thinking the fat in the burgers would grease the pan and my patties stuck a little. Give it a quick spray or add a little oil to the pan first before adding the patties.

Ingredients
  • 1 pound Ground Beef
  • ¾ cup Breadcrumbs
  • 1 can Mushrooms
  • 2 tablespoons Worcestershire Sauce
  • 1 tablespoon Ketchup
  • 1 egg
  • 1 teaspoon Salt
  • ½ teaspoon Pepper
  • 2 packages Brown Gravy Mix
  • 2 cups Water
Instructions
  1. In a large bowl, mix the ground beef, breadcrumbs, Worcestershire sauce, ketchup, egg, salt, and pepper.
  2. Mix to incorporate well.
  3. Divide the ground beef mixture into six portions and form into patties.
  4. Add patties to skillet cook over medium heat until browned on one side flip and brown on the second side cooking until cooked through.
  5. Remove patties from pan and set aside.
  6. To the skillet add the drained mushrooms and cook until browned.
  7. Add the brown gravy packets and 2 cups of water to the mushrooms in the skillet.
  8. Cook over medium high heat 1-2 minutes stirring while cooking until the gravy has thickened.
  9. Add the cooked patties to the pan and heat through.
  10. Serve patties and gravy over mashed potatoes.
  11. Sprinkle with parsley if desired.

How Much Does it Cost to Make a Batch of Quick Salisbury Steak?

I like to figure out the cost of each recipe I make for two reasons. One so I know how much it costs. Two if it’s a frugal recipe it is added to my meal plan more often.

If it’s more expensive it will show up less often but still appear to keep our family out of the same dinners meal rut.

When you know how much a meal or recipe costs to make you can keep control of your food costs more easily.

When I figure the cost of a meal I use regular sale prices as the prices for the cost of the ingredients. For this batch, I used $2.49/lb for the ground beef price per pound. It fluctuates between $1.99 a pound and $2.99 a pound on sale. So I averaged the price at $2.49 per pound.

The rest of the ingredients I used the average sale price for too. Bringing the cost of this Salisbury steak recipe to… $4.04 for six servings. Or just $.67 a serving. That’s not bad at all.

When I make it a meal with mashed potatoes and green beans our full meal costs $4.94 or $.82 per serving. That’s a lot less expensive than even a cheap meal out or a tv dinner from the freezer section.

Ingredients
  • 1 pound Ground Beef
  • ¾ cup Breadcrumbs
  • 1 can Mushrooms
  • 2 tablespoons Worcestershire Sauce
  • 1 tablespoon Ketchup
  • 1 egg
  • 1 teaspoon Salt
  • ½ teaspoon Pepper
  • 2 packages Brown Gravy Mix
  • 2 cups Water
Instructions
  1. In a large bowl, mix the ground beef, breadcrumbs, Worcestershire sauce, ketchup, egg, salt, and pepper.
  2. Mix to incorporate well.
  3. Divide the ground beef mixture into six portions and form into patties.
  4. Add patties to skillet cook over medium heat until browned on one side flip and brown on the second side cooking until cooked through.
  5. Remove patties from pan and set aside.
  6. To the skillet add the drained mushrooms and cook until browned.
  7. Add the brown gravy packets and 2 cups of water to the mushrooms in the skillet.
  8. Cook over medium high heat 1-2 minutes stirring while cooking until the gravy has thickened.
  9. Add the cooked patties to the pan and heat through.
  10. Serve patties and gravy over mashed potatoes.
  11. Sprinkle with parsley if desired.

How Much Does it Cost to Make a Batch of Quick Salisbury Steak?

I like to figure out the cost of each recipe I make for two reasons. One so I know how much it costs. Two if it’s a frugal recipe it is added to my meal plan more often.

If it’s more expensive it will show up less often but still appear to keep our family out of the same dinners meal rut.

When you know how much a meal or recipe costs to make you can keep control of your food costs more easily.

When I figure the cost of a meal I use regular sale prices as the prices for the cost of the ingredients. For this batch, I used $2.49/lb for the ground beef price per pound. It fluctuates between $1.99 a pound and $2.99 a pound on sale. So I averaged the price at $2.49 per pound.

The rest of the ingredients I used the average sale price for too. Bringing the cost of this Salisbury steak recipe to… $4.04 for six servings. Or just $.67 a serving. That’s not bad at all.

When I make it a meal with mashed potatoes and green beans our full meal costs $4.94 or $.82 per serving. That’s a lot less expensive than even a cheap meal out or a tv dinner from the freezer section.
